Festive Campari Jam
This gorgeous orange and cranberry jam spiked with Campari would make a lovely holiday gift or a welcome addition to the breakfast table this winter.
| Yield | 3 cups |
| Cook Time | 15 minutes |
| Total time | 30 minutes |
- 3 ½ ounces fresh or frozen cranberries
- ⅓ vanilla pod, cut in half and seeds scraped out
- 2 star anise
- 1 cinnamon stick
- 2 ½ cups freshly squeezed orange juice
- 8 ounces sugar
- ¼ cup Campari
Instructions
- Place all ingredients into a large unreactive pot with lots of extra room, set over high heat until boiling and then lower heat to keep at a simmer.
- Let the jam simmer for 15 minutes, stirring occasionally. Don’t leave unattended as it might boil over.
- Remove pot off the heat and carefully take out the star anise, vanilla pod, and cinnamon stick.
- Carefully pour the jam into clean, sterilized jars and seal. If you’re gifting these later, process for 10 minutes in a water bath, otherwise you can store the jam in the fridge for up to a month.
