Yield 4+ Cocktails
Cook Time 5 minutes
Total Time 24 hours
  • 1 750mL bottle of gin
  • 4” piece of fresh ginger, peeled and sliced
  • 15 pods of cardamom, crushed
  • 2 lemons

Instructions

  1. Sanitize a few quart sized jars or a large sealable pitcher by washing them thoroughly in hot soapy water and drying them fully, flipped upside down over a tray so that all the water drips out.
  2. Scrub the lemons to remove any dirt or residue before using them. Once clean you’ll need to peel them and remove the pith (white part) from the peels with a sharp paring knife. The pith can be discarded and the lemon flesh can be used for something else.
  3. Divide your cleaned lemon peels, the ginger slices and the cardamom between your jars, or place into the pitcher, and top with gin.
  4. Seal the containers and store in a cool dark spot for 24 hours, making sure to shake things up a bit every few hours, or when you pass by.
  5. Strain off the solids by passing the liquid through a coffee filter, pour back into container(s) and seal. This can be kept at room temperature indefinitely, or you can make a few gin and tonics right away to get things started.
